A Whimsical Summer Adventure in Denmark: Sculptures, Vikings, Ice Cream Dreams, and More!

Oh my goodness, talk about a magical summer day in Denmark! Our adventure began at the awe-inspiring "The Men at Sea," where four giant sculptures looked out over the Baltic Sea. Nestled in a picturesque landscape, the sun shone brightly, and the air felt calm and serene. In that moment, it was as if we had the entire place to ourselves, creating an intimate experience with these colossal figures that made our visit feel like a delightful secret outing just for us.

As we set off to the charming town of Ribe, the driving experience felt equally special. Fields of vibrant green stretched in every direction, painting the countryside in hues of green, white & yellow each passing moment, it seemed like the roads were cordoned off just for us, allowing us to relish the beauty of the landscape. This idyllic setting contributed to the whimsical postcard-like atmosphere of our journey.

Upon arriving in Ribe, it once again felt as though time had graciously slowed down for us. In the Viking Museum, we explored exhibits that brought Norse legends to life with no crowds to compete with; it was as if we had been granted exclusive access. We immersed ourselves in the fascinating world of Vikings, trying to picture a bustling village filled with brave adventurers making their mark on history.

The cobblestone streets welcomed us warmly, the quaint buildings and flower-filled window boxes creating a charming scene that felt untouched by the outside world. Each corner we turned revealed breathtaking views that were all ours, making it nearly impossible to believe that anyone else existed in this magical place.

After wandering through the enchanting streets, we felt a calling to Isvaflen, where our ice cream dreams awaited. Let me tell you—the ice cream here is nothing short of heavenly!

Imagine a scoop so creamy and flavourful that it feels like a cloud of pure bliss melting on your tongue. Each flavour dances with richness, from classic vanilla that sings like a sweet lullaby to adventurous options that spark an explosion of joy in every bite. The moment you taste it, you may find yourself contemplating a permanent relocation to Denmark—just for this ice cream!

Now, let’s not forget about the waffles, which are made right in front of your eyes. The sweet, buttery aroma wafts through the air as they cook, making your mouth water in anticipation. Freshly made waffles, golden brown are the ideal counterpart to the luscious ice cream.

When you combine the velvety ice cream with those hot, fragrant waffles, it’s a match made in dessert heaven!​ The taste is every bit as incredible as the aroma, leaving you longing for one more bite, then another, and maybe just one more after that.

Isvaflen is not just a treat; it’s a full sensory experience that will have you dreaming about your next visit long after you leave. So, if you find yourself in Denmark, do yourself a f(l)avour and indulge in this ice cream paradise—you might just want to move in permanently!

Moving along, we found the riverside setting to be a serene escape, as if the entire world had paused just for us. Sitting along the Ribe Å river, we enjoyed a moment of bliss that felt like it had been curated by the universe itself, offering us a taste of paradise with delicious treats and stunning surroundings. For a late lunch we chose to eat at Hotel Dagmar and it  was seriously amazing! As Denmark's oldest hotel, you can feel the history around you, but the best part was the food. I tried the Luxury Shooting Star a la Dagmar, and wow—it was a true Danish delight! Panfried and steamed lemon sole alongside Chile shrimp and salmon, all coming together for a seafood feast. It was topped with a fresh salad, some flavorful roe, zesty lemon, and crunchy cucumber, all sitting on fried sourdough toast. Each bite was a burst of flavors that made me feel like I was truly experiencing Danish cuisine.

Meanwhile, my family opted for a less exciting hamburger, ​but still delicious. To wash it all down, he ordered a local light beer that was so massive, it felt like he should have been sitting at a banquet table!​ Seriously, it was the size of a wine bottle—if he'd known, I'm certain he would’ve brought his own glass and a straw! I half expected it to come with a side of cheese and grapes! I guess who doesn’t love a beer that doubles as a workout? It was a fun and memorable meal that made me fall in love with Denmark even more!

Our overnight stay at a small, family-run hotel added to this enchanting experience. Though basic, it felt like a cozy retreat, providing us with everything we needed, including a delightful traditional Nordic breakfast. Each meal was shared quietly as we basked in the charming ambiance that seemed to cradle us in its warmth, reinforcing the notion that we might just be the only visitors in this idyllic corner of Denmark.

​The most magical moment of our stay, however, came very late one night.​ I decided to step outside into the brisk, chill air, feeling both adventurous and contemplative. As I looked up, I was completely captivated by the night sky, a breathtaking canvas of stars twinkling brilliantly above. I had never seen so many stars all at once in my life! Each shimmering dot felt like a distant memory, reminding me of the vastness of the universe. The crispness of the air only heightened the experience, wrapping around me like a gentle embrace. Standing there, immersed in the celestial wonder, it genuinely felt as if the entire world had been reserved just for me, granting me a surreal connection to the cosmos I had never experienced before.

Next, we journeyed to Billund for a day at LEGOLAND, While there were a crowd the absence of long lines allowed us to explore the LEGO masterpieces and vibrant attractions at our own pace. I can't help but compare it to the LEGOLAND in New York—both parks are fantastic, but each has its unique charm.

At Billund, I was immediately drawn to Emmet's Flying Adventure, where I soared through the skies alongside my favorite LEGO characters! The immersive experience truly brings the LEGO Movie to life in a way that’s simply magical.

Next up was Miniland, a breathtaking display of iconic landmarks crafted entirely from LEGO bricks. It’s like a miniature world tour that makes you feel like a giant, and the level of detail is absolutely impressive!

Then, I hopped on the Miniboats, where I navigated serene waters surrounded by miniature versions of famous locations. It felt like being in my own LEGO-themed version of a boat ride—and honestly, who doesn't love a little bit of miniature nautical adventure?

Last but not least, Unikitty’s Disco Drop had me laughing and screaming as I enjoyed the fun drop and whimsical colors. It’s the perfect combination of thrill and joy, and I couldn’t stop smiling!

​While LEGOLAND New York has its own amazing attractions, the unique experiences at LEGOLAND Billund make it feel like a true LEGO wonderland!​ If you’re a LEGO fan, both locations are a must-visit, but Billund definitely holds a special place in my heart!






 

Post-LEGOLAND, our decision to stay just outside Copenhagen opened up a serene, non-touristy lifestyle. The Scandi hotel provided a haven where we embraced the local culture at our leisure. Biking around the area, exploring charming malls, and savoring cozy lunches led to moments that felt delightfully private. It was as if our little slice of Denmark had been reserved solely for our enjoyment, encouraging us to explore with the freedom and joy of true locals.


Visiting Tivoli Gardens in the evening was like stepping into a dream that was made just for us. Established in 1843, this iconic amusement park has enchanted visitors for over a century and a half, serving as a source of inspiration for Walt Disney himself!

As the sun went down, the sparkling lights lit up the entire park, transforming it into a fairy-tale wonderland that felt like something out of a storybook.

Wandering the winding paths, I was totally captivated by the awesome vibe. Everywhere we looked, there were thrilling rides, beautiful gardens, and cute little eateries, ( not food carts or trucks) all glowing in those soft, twinkling lights. The laughter, joy & screams of thrill seekers on the rollercoasters around us really made it hit home that this place was designed for everyone to enjoy and have a blast.

​Honestly, Tivoli is the best amusement park in the world!​ With its rich history and stunning beauty, it’s the perfect spot to make unforgettable memories. If you're ever in the area, you definitely have to check it out!





 

Dining right on the waterfront in Nyhavn was a unique experience. Surrounded by those colourful buildings, each bursting with charm, we soaked up the vibrant yet chill vibe, making our meal feel leisurely and special. The stunning views reflecting on the water felt like Denmark was giving us a little gift, reminding us just how beautiful our journey had been.


Even on a rainy day, visiting the Danish Palace and catching the changing of the guards felt uniquely ours. My daughter’s excitement was priceless—her eyes wide with joy—adding to the magic of the moment. It felt like we were in our own little world, separate from the hustle and bustle around us. Every visit here has reminded us that Denmark is so much more than just Danish butter cookies (though those are amazing!).

Let’s not forget about the famous Little Mermaid!​ We all know the tales created by the legendary Hans Christian Andersen, and it was so cool to finally see the statue in person. Standing there by the water, I couldn’t help but think about how this mermaid holds a special place in all our hearts—and in fairy tale history.

Throughout this entire adventure, Denmark had us feeling like it set the stage just for our family fun. Each site—whether it was the majestic sculptures or the charming cobblestone streets—wrapped us in a cozy blanket of happiness and wonder. In those moments, we truly felt like we had the whole place to ourselves, creating magical memories that will be etched in our hearts forever. 🥳🌷🍦💖
